As of the most recent harvest, Kosterina Original EVOO has a free acidity of 0.17% and Kosterina Organic Everyday EVOO has a free acidity of 0.29%. To qualify as extra virgin, an olive oil must have an acidity level below 0.80%. Lower acidity indicates fresher, higher-quality oil with better flavor stability -- both Kosterina oils are well below the extra virgin threshold.
